Do you use Elementor or custom themes?

Both, depending on who needs to edit the site afterwards. Elementor suits teams that want to build pages themselves; a custom or child theme suits sites where speed and tight control matter more.

Will I be able to edit the site myself?

That is part of the scope. Templates are built with editable sections, and handover covers how to change the content you will realistically want to change.

What affects the price most?

The number of distinct templates and any custom functionality. Adding pages that reuse an existing template costs far less than adding new template designs.
